Baked Tofu with Garlic Ginger Dressing

Tofu is one of the most popular and humble Chinese ingredient. It’s a very versatile ingredient and serves as a perfect meat substitute for vegetarians and vegans in Oriental cuisines. It is high in protein and incredibly healthy when eaten in moderation, and could be cooked in many different ways. There are a huge range of tofu available from extra firm to medium to soft to silken and each variety has its own unique texture and properties with adapts to the dishes in which they are used.

Tofu is plain and does not have any flavour of its own, but is an excellent absorber of flavours so it is crucial to have a sauce or seasoning which is packed with depth and aromatic spices which can enhance the dish. This tofu dish uses a surprisingly small amount of ingredients, with some strong spices being used which pack in a lot of flavour. The garlic, ginger and soya sauce provide the base for the dressing and give the salty and acidic taste to the dish. The mirin gives it a slightly sweet flavour and the nutty taste and aroma of the sesame oil add a different element to the dressing which is completed with the white pepper and chillies.

The dressing infuses itself into the tofu packing it full of flavour. It is simple, light healthy and utterly delicious and perfect as a side dish or to have on its own as a salad for lunch.

Helpful Tips and Tricks for making Baked Tofu with Garlic Ginger Dressing:

  • Silken tofu is extremely soft and breaks easily, so when you remove from the packaging be extra careful.
  • In order to make the tofu enough tasteful, we need to use a large amount of dressing sauce.
  • The Sauce for this should be slightly over salty as the tofu is plain, Soy sauce from different brand may differ in saltness, so adjust the salt accordingly.
  • You can make this dish a day in advance just bake it the next day.

Baked Tofu with Garlic Ginger Dressing

Ingredients

  • 1 box (300 grams) silken tofu, clear spring organic tofu
  • 1 scallion, chopped
  • 3 cloves garlic, finely chopped or minced
  • 1 tbsp ginger, finely chopped
  • 1 fresh Thai chilli, cut diagonally
  • 1.5 tbsp light soy sauce
  • 2 tbsp mirin
  • 1 tbsp sesame oil or vegetable oil
  • 1 tbsp fresh coriander, chopped
  • 1/4 tsp white pepper
  • Salt to taste

method

  1. Preheat the oven at 170ºC.
  2. Carefully remove the tofu from the box and place on a kitchen towel.
  3. Let the tofu stay on the towel for 5 minutes to drain out the excess water.
  4. Heat oil in a small pan. Add the garlic and ginger and sauté for a minute. Now add the white part of the scallion and sauté for a few seconds. Add the light soy sauce, mirin, peanuts white pepper, coriander and scallion green, saute for a minute and switch of the gas.
  5. Place the tofu on a large foil. Pour about 3/4 of the sauce on top of the tofu. Loosely cover the tofu from all the sides and seal, similar to a parcel. Place on a baking tray and bake for 10-12 minutes.
  6. Remove from the oven. Place the tofu on a serving dish. Top with the rest of the sauce, scallions, red chilli and sesame seeds. Serve hot.
