Ingredients to make Burrata Tomatillo and Tomato Salad

For this recipe, you’ll need:

  • Heirloom tomatoes: about 250g of ripe heirlooms. Choose a variety of different shapes and colours to really make this salad pop.
  • Tomatillos: you’ll also need 200g of tomatillos. They are larger than cherry tomato but much smaller than a regular tomato. Make sure the outer leafy husk is nice and green and not starting to brown, a sign it may not be as fresh as you need it to be.
  • Radish: They have the most incredible peppery flavour, and adds a bite.
  • Jalapeños: give a slight kick. thinly sliced works best.
  • Burrata: Burrata is a creamy Italian cheese that’s known for its luscious texture and delicate flavour. It’s often referred to as the “queen of mozzarella” due to its rich and luxurious characteristics.
  • Garlic: For sharp depth of flavour.
  • Herbs: Use mixed soft herbs, like mint, dill, chervil, tarragon, or chives.
  • Lime Zest: lime and tomatillos compliment each other
  • Olive oil: a fantastic quality olive oil will enhance and unite the flavours of other ingredients.
  • Salt & black pepper: A quality sea salt will make the creamy and sweet notes in the dairy really sing. It makes all the flavours pop!

Salad Dressing

The dressing for this salad is just as simple as the salad itself.

  • Shallots: have a delicate flavour which enhances the salad with our overpowering it.
  • Cider vinegar: of course! It gives this salad dressing its delicious tangy flavour.
  • Lime Zest and juice: zesty and citrusy kick to the dressing.
  • Sweetener: sweetener balances the bold vinegar and zesty lime juice in this recipe. I used sugar as it has a neutral taste but you can substitute it with maple syrup, agave or honey.
  • Seasoning: To really up the flavour of your dressing, reach for the herbs and spices, which add both flavour and health benefits. Dried oregano, tajin, salt and pepper will unite all the flavours.

How to Make Burrata Tomatillo and Tomato Salad

~ Start by chopping your heirloom tomatoes and tomatillo into different size slices or various size wedges to give the sand a depth. Slice the radish & jalapeños, chop the herbs and mince the garlic.

~ Put the finely dices shallots, cider vinegar, sugar, oregano, tajin, lime zest, lime juice, salt and pepper in a mason jar and mix well. Keep aside for the shallots to soften and infuse its flavours into the dressing.

~ Add the tomatoes, garlic, fresh herbs and lime zest to the bowl and gently toss. Allow the tomatoes to marinate for at least 10 minutes. Give the salad another toss, add the diced radish and the dressing. Taste and season with more salt and pepper as required.

~ Heat a small skillet over low-medium heat and add the chopped almonds. Toss gently until they start to colour lightly. Add the aleppo chilli or Urfa chilli, salt, oregano and sugar and toast until the sugar melts and forms a crust over the almonds. Remove from the heat and let it cool.

~ Arrange the tomato salad in a large serving plate. Tear the burrata into four pieces and arrange it around the tomatoes. Drizzle with a generous amount of olive oil and scatter over caramelised nuts and some more chopped herbs. Enjoy!

Helpful Tips and Tricks to Make Burrata Tomatillo and Tomato Salad

  • Look for a true Buffalo Milk Burrata – Burrata is sometimes made with cow’s milk, and sometimes with buffalo milk. Burrata made from the milk of water buffalo is soft and taste incredible.
  • Tomatillos – are tart in flavour so cutting them into thin slices will beneficial.
  • Always buy as fresh as possible – Burrata is best eaten right away. The shelf life when I buy at most grocery stores is often a week, but I feel it significantly looses its freshness toward the end of that window. Buy fresh cheese and use right away.
  • Give the salad some time. Let the tomatoes and shallots sit for some time to draw out the juices and soften the shallots. This is the perfect time to drain the burrata and bring it to room temperature, which allows the rich flavours to shine.
  • Skip the layering of the salad as you would in a caprese salad. Just top the tomatoes with the torn burritos, allowing the creamy interior to mix with the tomato juices.
  • Don’t skimp on the salt – You’ll really taste the salt in this recipe. A quality sea salt will make the creamy and sweet notes in the dairy really sing. Use Maldon or any flaky kind to finish the salad.

Ingredients

For the Dressing

  • 1 banana shallot, finely chopped 
  • 2 tbsp cider vinegar 
  • 2 tbsp fresh lime juice
  • 2 tsp granulated sugar 
  • 1 tsp dried oregano 
  • ½ tsp salt 
  • ½ tsp tajin
  • zest of a lime
For the Salad

  • 1 large ball fresh burrata 
  • 250 gram heirloom tomatoes
  • 200 grams tomatillos
  • 100 grams radish, thinly sliced
  • 3 tbsp mixed herbs (mint, dill, chervil, tarragon or chives)
  • 1 jalapeño,  thinly sliced
  • 1 clove garlic, minced
  • zest of 1 lime 
  • 2-3 tbsp olive oil 
  • salt and pepper

For the Caramelised Almond

  • 30 g chopped almonds
  • 1.5 tbsp caster sugar
  • ½ tsp Urfa chilli flakes or Aleppo chilli flakes
  • 1 tsp dried oregano
  • ¼ tsp salt 
  • lime zest 

method

Make the Dressing

In a mason jar, mix the finely diced shallots, cider vinegar, lime juice, sugar, oregano, salt, tajin and zest of a lime. Shake and keep aside to rest for 10-15 minutes for the shallots to soften. 

Make the Salad

  1. Peel the tomatillos of their husks and wipe with a clean, damp towel. Wash the heirloom tomatoes and wipe them clean with a kitchen towel. 
  2. Cut the tomatillos into slices, and the tomatoes into wedges, slices and chunks. Slice the radish and jalapeño, mince the garlic and chop the herbs. 
  3. In a large mixing bowl add the cut tomatoes, sliced tomatillos, minced garlic, lemon zest, mixed herbs and salt and mix well. Rest for 10 minutes. Allow the tomatoes to marinate a bit. 
  4. Now add the sliced radish & jalapeños and pour the dressing on top. Gently mix everything together. 

Caramelise the nuts

  1. Heat a small skillet on low-medium heat and add the almonds. Toast gently until the almonds start to colour lightly. 
  2. Now add the rest of the ingredients and roast for another 1-2 minutes until there is a light sugar crust around the almonds. Remove from the heat and let it cook. 

Assemble

Arrange the tomato salad oil a large serving plate. Tear the burrata into 4 bite-sized pieces and arrange them in the middle around the tomato salad. Drizzle with olive oil and garnish with the chopped herbs and caramelised nuts. Enjoy!!
