Ingredients

  • 2 tbsp extra virgin olive oil 
  • 1 yellow onions, chopped  (1 cup)
  • ½ cup chopped carrot
  • ½ cup chopped celery 
  • ½ cup chopped red pepper
  • 4 cloves garlic, chopped
  • 3 tbsp tomato paste 
  • 2 bay leaf
  • ½ tbsp dried oregano
  • ½  tbsp dried basil
  • 1 tsp dried thyme
  • 1 tsp red pepper flakes
  • 4-5 cups of vegetable broth
  • 1 can (400g)  finely chopped tomatoes or crushed tomatoes
  • 3 tbsp cream cheese
  • 1 cup packed spinach, roughly torn 
  • ¼ cup grated parmesan 
  •  6-8 lasagna noodles, broken into pieces 

method

  1. Heat olive oil in a large Dutch oven over high heat. Add onion, celery, carrots  and red pepper, cooking until the vegetables soften, approximately 5 minutes. Stir in garlic and bay leaf, and cook for an additional 1 minute.

  2. Incorporate the  tomato paste, basil, oregano, thyme, and chilli flakes, cooking for 5 minutes. Now,  add crushed tomatoes and broth. Season with salt and pepper. Simmer for 10-20 minutes until the mixture thickens slightly.

  3. Stir in the cream cheese  and simmer until warmed through, around 10 minutes.

  4. Meanwhile, cook the noodles until they reach an al dente texture. Drain and return them to the pot. Add the cheeses and spinach and simmer for a few minutes. 

  5. Ladle the soup into bowls and garnish with Parmesan and fresh herbs. Serve and enjoy your delicious soup!
