Easy Lemon and Lavender Popsicles: A Refreshing and Healthy Treat

As autumn sets in and the crisp air begins to fill our days, it’s the perfect time to enjoy one last burst of summer with homemade popsicles. There’s something so satisfying about whipping up a batch of healthy, naturally sweetened treats to enjoy with the family. And for me, nothing beats the simple joy of these Lemon and Lavender Popsicles.

These delightful popsicles are made with just four natural ingredients and sweetened with honey, making them a refreshing and guilt-free treat. The bright, zesty lemon pairs beautifully with the floral notes of lavender, while the honey adds just the right amount of sweetness. They’re the perfect balance of tart, sweet, and soothing — an ideal way to hang on to those warmer days a little longer.

Why You’ll Love These Popsicles

  • Naturally Sweetened: Instead of using refined sugar, I prefer honey for a more wholesome, natural sweetness. Honey brings out the best in the tart lemon flavour and complements the lavender beautifully.
  • Simple Ingredients: You only need four ingredients to create this refreshing treat, making it super easy to throw together when you fancy something cool and healthy.
  • Customisable: If lavender isn’t to your liking, don’t worry! You can leave it out entirely, or even swap it with dried rose flower or apple blossoms or camomile. Swapping out lavender for dried chamomile flowers gives the popsicles a more subtle, herbal undertone. Chamomile has a delicate, naturally sweet flavour that pairs beautifully with the bright lemon and honey, making the popsicles soothing as well as refreshing.

Ingredients for Lemon and Lavender Popsicles

  • Lemon Juice: The star of the show, lemons bring a bright and refreshing tartness that makes these popsicles incredibly thirst-quenching. Freshly squeezed lemon juice is always the best choice. However, if fresh lemons aren’t available, bottled lemon juice will work as a good alternative in this recipe.
  • Honey: A natural sweetener that gives the popsicles just the right amount of sweetness without being overpowering. It also helps give the popsicles a smoother and softer texture.
  • Dried Edible Lavender: Lavender adds a unique floral note. Just be sure to use culinary-grade lavender for the best flavour.
  • Water: Simple and pure, water forms the base of these popsicles. Helps to dilute the lemon juice, ensuring the popsicles have just the right amount of tartness without being overwhelming.

How to Make Lemon and Lavender Popsicles

  1. Infuse the Lavender: Begin by brewing the dried lavender in hot water. Allow it to steep for about 30 minutes, letting the floral aroma fully develop.
  2. Prepare the Lemon and Honey Mixture: While the lavender is steeping, juice your lemons. Once ready, combine the fresh lemon juice and honey with the lavender-infused water. Allow the mixture to steep for 1-2 hours or, for a stronger infusion, leave it overnight.
  3. Strain and Freeze: After the lavender has infused to your liking, strain the mixture to remove the lavender flowers. Pour the strained liquid into your popsicle moulds and freeze overnight or until completely solid.
  4. Serve and Enjoy: Once fully frozen, your homemade popsicles will be ready to enjoy. Simply remove from the moulds and savour the refreshing taste!

Which Lavender To Use???

When making Lemon and Lavender Popsicles, it’s important to use culinary-grade dried lavender. This type of lavender is specifically grown and processed for safe consumption, ensuring it doesn’t contain any harmful chemicals or additives. Culinary lavender is typically a variety of English lavender (Lavandula angustifolia), which has a sweeter, more subtle flavour compared to other types.

When shopping for dried lavender, look for terms like “culinary-grade” or “food-safe” on the packaging. You can often find it at health food stores, specialty shops, or online. Avoid using lavender that’s meant for decorative or aromatic purposes, as it may contain preservatives or pesticides not meant for ingestion.

Helpful Tips for How to Store Homemade Popsicles

To keep your homemade popsicles fresh and delicious, follow these storage tips:

  1. Keep in Moulds: If you’re planning to eat them within a few days, you can leave the popsicles in the moulds. Just ensure they’re covered or sealed to prevent freezer burn and absorb any unwanted odours from the freezer.
  2. Wrap Individually: For longer storage, once the popsicles are frozen solid, remove them from the moulds and wrap each one in plastic wrap or parchment paper. This will help prevent freezer burn and keep them fresh for up to 2-3 weeks.
  3. Use Airtight Containers: Alternatively, you can store the wrapped popsicles in an airtight container or freezer bag. This will further protect them from freezer odours and preserve their flavour.

Make sure to label and date the popsicles so you can keep track of their freshness!

Great question, Josh! You can definitely add dates for a healthier twist, but it will change the flavour a bit. If you decide to try it, let us know how it goes!
