Easy Tomato Bisque Recipe

Ingredients

  • 1 tbsp olive oil
  • ½ large white onion, chopped fine
  • 2 celery stalks
  • 1 clove garlic
  • 4 carrots, shredded
  • 1 kg fresh wine tomatoes
  • 1 cup light cream or oat cream
  • 1 tsp dried oregano
  • ½ tsp baking soda
  • Salt & pepper to taste

method

  1. Put a large saucepan on medium-low heat, sauté the onions, garlic  and chopped celery in olive oil until they become translucent. Add shredded carrots and a pinch of salt, pepper and oregano and cook for an additional 3-4 minutes, until the carrots soften, and the onions start to brown.
  2. Roughly chop the tomatoes and add to the saucepan, along with ¼ tsp of salt. Cook until they become soft, around 4 more minutes. Sprinkle the baking soda and mix until well incorporated. Pour in the cream and season with  some more salt and pepper. Reduce heat to a simmer, cover, and let it cook for 25-30 minutes.
  3. Switch off the gas and carefully transfer the bisque to an electric mixer and blend until smooth. Strain the bisque through a fine mesh sieve. Transfer it back to the pot and reheat at low. 
  4. Serve with grilled cheese sandwich or croutons.
