Fluffy Pancakes With Berry Compote

The ultimate weekend breakfast which takes no time at all to make. EASY. QUICK. LIGHT. FLUFFY. These fluffy pancakes are soft and super fluffy and each mouthful melts in your mouth. Add to that a sweet fresh berry compote on top, it tastes absolutely delicious! You’ll be reaching for the stack as soon as it is in the table and be fighting over it with the whole family!

Pancakes from scratch are very easy to make and are always the star of any breakfast table.

Ingredients needed For Homemade Pancakes:

  • Self Raising Flour
  • Sugar
  • Salt
  • Egg
  • Milk
  • Vanilla extract

And of course TOPPINGS! Why limit yourself to just butter and maple syrup? I love mine with berries (like in this berry compote!), cream and strawberries, maple syrup and banana and I could go on and on.

How to make the best fluffy pancakes

It all starts with the batter. Too thick and they will be gluggy and undercooked on the inside. Too runny, and the pancakes will spread out and won’t fluff up. I like to test the batter with my spoon or ladle, lifting it gently above the rim of the bowl. It has to be thick BUT able to run slowly and nicely off of the spoon. A couple of lumps is okay, but I do like to smooth out my batter as much as I can gently with a wire whisk.

How to Pour Pancake Batter

When making this recipe I like to use a 1/4 cup measuring cup to scoop the batter.  This way I get uniform, perfect pancakes.  When I add the batter to the griddle I start from the centre and gently pour in a circular movement to help the batter spread into a nice round circle.

Helpful Tips and Tricks to Make Fluffy Pancakes with Berry Compote

  • The self-raising flour can be replaced with flour or whole wheat flour and baking powder.
  • Don’t over mix the batter.
  • The trick with pancakes is getting the stove temp perfect – it should take 30 seconds for the bubbles to appear then 30 – 45 seconds on the other side until golden, 1 minute per pancake. So adjust as you cook, and if you’re impatient like me, get 2 pans going at the same time! 
  • Some TOPPINGS: Butter, maple syrup, fruit sauces, jam, cream, lemon juice + sugar, yoghurt
  • You can pre make the pancake mix and keep in your cupboard. Place the self raising flour, salt, and sugar in a ziplock bag, large jar or bottle. Then add the egg, vanilla and milk when you want to  make up a batch of pancakes!

Ingredients

For the Pancakes

  • 150 grams self-raising flour
  • 150 ml whole milk
  • 1 tsp vanilla extract
  • 1 large egg
  • 2 tbsp sugar
  • Pinch of salt

For the Berry Compote

  • 2 cups fresh mixed berries, washed and halved
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • 2 tbsp sugar

method

  1. Combine together the self raising flour, sugar, and salt in a large-sized bowl. In a small bowl whisk together milk, vanilla extract and egg.
  2. Add the egg mixture to the flour mixture and use a wire whisk to stir everything together until just combined. It will be slightly thick and lumpy, but should be well incorporated.
  3. Allow the batter to rest for 5 minutes. Heat a lightly oiled skillet or griddle to medium high heat. Wipe any access oil.
  4. Pour the batter onto the griddle, using approximately 1/4 cup for each pancake.Cook each side for 3-6 minutes, until lightly golden brown.

To Make the Berry Compote:

  1. In a medium saucepan, combine the berries, lemon juice, and vanilla extract and bring to a simmer over medium heat. Reduce the heat to low simmer, stirring occasionally, until berries are tender and juicy, approximately 10 Minutes.
  2. Stir in the sugar and continue to cook for another 5 minutes, until the sauce thickens.
  3. Keep warm.
