Tofu is my family’s all time favourite food item, and its no surprise why!! It is such a versatile ingredient which can absorb and enhance any flavours, and these can be fried, sautéed, baked and even more! It is rich in protein, low in calories and is available in different textures from silken to soft to firm, providing a variety to blend with the type of dish being prepared. It can be served with rice or noodles, in soup or as an appetiser or just enjoyed by itself as a stir fry tofu dish.
Garlic Peppercorn tofu is a simple and quick dish, the tofu is marinated in the sauces which can be done the night before or even on the same day of preparing. It is pan fried to bring out the flavours and texture and helps keep the tofu soft and silky. The marinade itself is filled with classic Chinese flavours, and the peppercorns provide a spicy aromatic flavour to the tofu. By allowing it to marinate for 30 minutes at least, the tofu soaks in the flavours of the marinade, and when garnished with the cucumber and green onions, the dish gets a fresh and crunchy element, completing the perfect meal.
