How to Make Lettuce Wrap with Spicy Cauliflower

To start, cut the cauliflower florets into pieces around ½ inch in size. Avoid going too small or too large.

Roast the chopped cauliflower in the oven on a spacious baking sheet (ensuring room for roasting, not steaming!). With some neutral oil, salt, pepper and Korean Red Pepper Powder – Gochugaru. Let them achieve a slight crispness and begining to char.

While the cauliflower is in the oven, make the sauce by whisking the ingredients together until smooth and set it aside for later use.

Once the cauliflower has roasted, mix ½ the sauce right on the pan and bake it again for 7-8 minutes or till the cauliflower has a touch of charring and caramelisation—exactly what we’re aiming for! Remove and toss with some more sauce.

Lettuce Wrap with Spicy Cauliflower

Ingredients

For the Cauliflower Lettuce Wrap 

  • 6 cups small cauliflower florets (from 2 medium heads)
  • 2 tbsp neutral oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tbsp Korean Red Pepper Powder (Gochugaru)

For the Sauce:

  • ¼ cup hoisin sauce
  • ⅓ cup soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 clove garlic, grated or minced 
  • 1-inch knob fresh ginger, grated
  • 1 tbsp gochujang (or a spicy chile paste, or sriracha – adjust for desired spiciness)
  • 1 tbsp toasted sesame oil
  • 1 tbsp cornstarch 

For the Wrap :

    • 8-10 large leaves of butter lettuce or gem lettuce
    • ¼ cup Thai Sweet Chilli Coated Peanuts
    • ¼ cup  julienned carrots 
    • ¼ cup julienned cucumbers 
    • Chopped spring onions , fresh chillies and coriander 
    • Sriracha
    • Fresh lime

Roast the Cauliflower:

  • Preheat the oven to 220ºC. Toss the cauliflower with a little oil, a pinch of salt, pepper and gochugaru (Korean Chilli powder). Roast for 20 minutes.

Prepare the Sauce:

  • In a mixing bowl add all the ingredients of the sauce and mix until no lumps remain. 

Combine Cauliflower and Sauce:

  • Pour ½ of the sauce directly onto the roasting pan with the cauliflower, ensuring it's coated well. Gently toss to combine. Put the pan back in the oven and bake for 7-8 minutes or until the cauliflower is charred and roasted. 

Assemble :

  • Arrange the roasted cauliflower in lettuce cups. Top with extra sauce, crushed peanuts, carrots, cucumber and a drizzle of  sriracha and some lime juice. Enjoy!
