Ingredients

  • 2 pieces of bread, toasted 
  • ½ cup hummus
  • ½ cup mixed cherry tomatoes, diced or halved 
  • ½ Persian cucumber, diced
  • 2-3 radish, sliced
  • 2 green onions, chopped
  • 2-3 tbsp fresh mixed herbs, (parsley, mint oregano)
  • 1 tbsp sesame seeds
  • 1 tbsp extra virgin olive oil
  • juice of ½ a lime
  • 2 tsp za'atar
  • 1 tsp Aleppo chilli flakes
  • 2 tbsp feta cheese, crumbled

method

  1. Prepare the Salad: In a small bowl combine the diced tomato, cucumber, radish, green onions, and herbs. Stir to combine. Add the olive oil, lemon juice, sesame seeds and 1tsp of the za'atar spice, stir to combine. Set aside.
  2. Toast your favourite bread in a toaster to your preferred level of crispiness. 
  3. Spread a generous layer of hummus on each of the two pieces of bread evenly.
  4. Sprinkle the hummus with some za'atar spice, Aleppo chilli flake and drizzle with some olive oil. 
  5. Add a spoonful of the tomato salad to each piece of hummus toast followed by a sprinkling of feta cheese. Serve immediately. Enjoy!
