This isn’t your average cheese on toast, it’s Mexican cheese on toast with Avocado Salsa! This.Is. Amazing. Packed with plenty of flavour and simple to make this cheese on toast is actually one of my favourite meals in general. It’s so delicious, I’d call it one of life’s simplest pleasures. Combining 2 different type of cheese with a red onion, sweetcorn, herbs and spice mixture and finishing with  irresistible avocado mix and a hot sauce you end up up something that feels complex and decadent. Perfect for a quick lunch or weekend brunch along with a Quinoa salad with grilled corn and feta cheese.

I have very fond memories of a irresistible toasted cheese on toast with Classic Cream of Tomato Soup from my childhood. Though that version had lots of butter, was full of cheese, plus had chillies, mustard powder, salt, and pepper, and it was made in the toaster oven. It was comfort food at its best. If you are a stranger to cheese toast, you’ve definitely been missing out. If you’re well-familiar with this cheesy toast, I hope you find this new twist intresting to change up your regular toast. You will be surprised how a few simple ingredients make for over-the-top flavour.

How to Make the Best Mexican Cheese on Toast with Avocado Salsa

1. Buy good bread and toast it well

A sturdy, thick-sliced, white, sourdough or wholegrain bread make the best cheese toast. Golden, well-toasted bread offers a sturdy and crisp base, which is a shattering contrast against the cheese and avocado.

2. Pick your avocados

You want ripe but not over-ripe Hass avocados. Look for avocados that yield a bit to a gentle squeeze, but avoid using avocados that are mushy or stringy on the inside. You want to dice the avocado for this recipe.

3. Choose a sharp cheese

Cheese is the star ingredient so a good quality cheese is key. Choose a sharp, stronger-tasting cheese like cheddar or a great melting cheese like Monterey Jack or Quesillo Oaxaca. combining two different type of cheese My preferred combo is sharp cheddar ( because of its creamy meltability it’s great for this toast) and Monterey Jack.

TOP TIP – always use freshly grated cheese. Firstly because it doesn’t contain added preservatives and chemicals and secondly it gives a fresher, creamier taste. It also melts quickly and easily. 

Ingredients for Mexican Cheese on Toast with Avocado Salsa

Get ready to make this melty, gooey, fiery Mexican cheese on toast which is mind-blowingly delicious. Here is a list of all the ingredients you will need to make these indulgent toast:

  • Bread. You want to use a thickly sliced bread, either regular or sourdough for the best cheese toast as they can hold the toppings and sauces. . You can also use gluten-free bread if you prefer.
  • Sweetcorn kernels. This recipe will work with any type of corn, canned, frozen or fresh BUT it is definitely best made with fresh corn kernels because its bursting with sweetness and the soft, buttery flavour adds to the dish.
  • Red onions. Red onions have a milder flavour which works perfectly with this dish.
  • Spring onions. The fresh, sweet, and subtly pungent flavour is well suited for this dish.
  • Herbs and Spices. Fresh coriander leaves and dried Mexican Oregano adds flavour. spices like Tex-Mex seasoning, onion powder, garlic powder, salt and pepper bring the dish together.
  • Red onion. works the best because of its mild flavour, but one can also use brown onion or white onions also.
  • Cheese. My personal favourite is a sharp cheddar cheese and Monetary Jack – but feel free to use any of your favourite cheeses!
  • Lime juice. It’s tangy, refreshing, and brings out the best flavours.
  • Avocado. An important staple of the Mexican diet.
  • Mexican Hot sauce: Mexican-style hot sauce, also known as salsa picante works the best with this recipe. Because it is a smooth variety of hot sauce and uses a blend of different peppers this sauce is unique.

How to Make Mexican Cheese Toast with Avocado Salsa

  1. Mix together the onions, sweetcorn, jalapeño, spring onions, coriander, cheese, garlic and onion powder, tex-mex seasoning, lime juice and some cracked black pepper in a bowl and keep aside.
  2. Preheat the oven/grill to 180ºC and grill the bread on both sides until lightly golden.
  3. Spread butter on both sides of the toasted bread. Sprinkle the prepared cheese mix evenly on the toast and grill for 6-7 minutes until they are golden brown and bubbly.
  4. Prepare the Avocado Salsa – In a large bowl, combine all of the ingredients of the salsa and give everything a toss and taste to see if you need additional salt.
  5. Spread the avocado salsa on the cheese toast, drizzle with hot sauce and coriander micro greens. Garnish with sliced radish and jalapeño. Drizzle with olive oil and serve immediately.

Helpful Tips and Tricks to Make Mexican Cheese Toast with Avocado Salsa

  • Just add a pinch salt: Sounds simple, but a simple pinch of salt heightens all the flavours
  • Mix of cheese: You can use whatever you have on hand, but using a mix of cheese varieties adds complexity! 
  • Thickly sliced bread works best with these toasties.
  • Toasting the bread for 5 minutes in the oven, before topping it with the cheese mix is very important.
  • Serve fresh and hot: tastes best straight out of the oven.
  • Unsalted butter: just like in grilled cheese sandwich, you’ll spread unsalted butter on these cheesy toast before baking.

Ingredients

  • 1 cup sharp cheddar cheese, grated
  • 1 cup Monterey Jack cheese, grated
  • ½ cup fresh corn kernels, boiled
  • 1 small red onion, finely chopped
  • 2 spring onions, chopped 
  • ½ jalapeño, finely chopped 
  • ⅓ cup chopped coriander leaves
  • ½ tsp tex-mex seasoning 
  • ¼ tsp onion powder
  • ¼ tsp garlic powder
  • pinch of salt
  • black pepper
  • juice of ½ lime 
  • 6 slices of sourdough bread, toasted

For the avocado salsa

  • 1 hass avocado, diced
  • ½ lime, juiced
  • ½ jalapeño, finely chopped
  • 2 tbsp chopped coriander leaves

For Garnish

  • Mexican hot sauce
  • sliced radish
  • coriander micro greens
  • tex-mex seasoning

method

  1. Preheat the grill to 180ºC. Put the slices bread on a baking bake and grill for 4-5 minutes. 
  2. In a mixing bowl, add the cheddar, mortary jack, corn, onions, spring onions, jalapeño, coriander, lemon juice and the spices and mix everything together. 
  3. Spread butter on the grilled bread. Spread the prepared cheese mixture over the toasted bread slices and grill until bubbling, can take 6-7 minutes.
  4. Prepare the Avocado Salsa : In a small mixing bowl mix the diced avocados, coriander, jalapeño, lime juice and salt. 
  5. Scatter the avocado salsa over the cheese toast. Drizzle with the hot sauce and top with coriander micro green. Garnish with radish and jalapeño slices and spring some tex-mex seasoning. ENOY it hot!
