Ingredients

  • ¼ cup olive oil
  • 400g mixed mushrooms, trimmed and sliced
  • 1 red onion, thinly sliced
  • 2 cloves garlic, minced or finely chopped
  • 1 can (400g) white beans, rinsed and drained
  • 3 tbsp balsamic vinegar
  • 1.5 tbsp sherry vinegar
  • 1 tbsp white Italian condiment
  • 1 tsp lemon zest
  • 1 small preserved lemon, chopped
  • ½ tsp crushed red pepper
  • 1 tbsp fresh dill, chopped
  • 1 tbsp curly parsley, chopped
  • 1 tbsp fresh thyme leaves
  • salt & freshly cracked black pepper
  • 6 slices of fresh, sourdough bread 

For the Lemony Ricotta Spread

  • 250g ricotta cheese
  • Zest of 1 lemon (finely grated lemon peel)
  • 1-2 tablespoons of fresh lemon juice (adjust to taste)
  • 1 tbsp chopped chives
  • Salt and freshly ground black pepper to taste

method

  1. Toast the Bread- Heat a  skillet over medium-high heat and drizzle some olive oil. Working in batches toast the bread, 1-2 minutes per side until golden and crisp. Transfer the toast to a serving plate.

  2. Cook the Mushrooms and Onions: In the heavy based pan, add the ¼ cup of olive oil. Once hot, add the sliced mushrooms. Cook for about 4-5 minutes until browned and tender. Add the sliced red onion, chopped garlic and a pinch of salt. Continue to cook for 3-4 more minutes until the onions start to caramelise. 

  3. Add White Beans and Seasonings: Stir in the white beans, balsamic vinegar, sherry vinegar, white condiment, lemon zest, preserved lemon, herbs, and chilli flakes.  Simmer for about 5 minutes. Season with salt and pepper.

  4. Make Lemony Ricotta Spread: In a mixing bowl, combine ricotta cheese and lemon zest for intense lemon flavour. Gradually add lemon juice, starting with one tablespoon, and adjust to taste. Season with a pinch of salt, freshly ground black pepper and chopped chives for balanced and enhanced flavours.
  5. Assemble and Serve: Spread the lemony ricotta cheese onto the toasted bread slices. Mound the mushroom and white bean mixture on top.
