Peach Tomato and Mozzarella Salad with Dill Vinaigrette

Ingredients

  • 4-5 heirloom tomatoes, sliced
  • 3 peaches
  • 1 avocado, sliced
  • 1 cup baby spinach
  • 1 head gem lettuce, roughly chopped
  • 1 tbsp dill, chopped
  • 150 g fresh burrata
  • 1 tbsp olive oil
  • 2 tbsp almonds, roasted

  Dressing:

  • ⅓ cup extra virgin olive oil
  • 1 tsp dijon mustard
  • 1 tbsp balsamic vinegar
  • 2 tbsp lime juice
  • 2 tsp agave syrup
  • 1 tbsp fresh dill
  • ¼ tsp salt & pepper

method

  1. Prepare the peach by slicing in half, remove the stone and slice again, brush with a little olive oil.
  2. Preheat a grill pan over medium heat. Place peach slices on the grill and cook for 2-3 min until grill marks have formed & are slightly softened. Flip and cook for another 2-3 min. Remove from heat and let it cool.
  3. Make the dressing- put all the ingredients in a mason jar and shake until emulsified.
  4. In a large salad bowl, toss the greens, dill, tomatoes, avocado, peaches, almonds and dressing. Top with dill, mozzarella & almonds and serve.
