  1. Potatoes: I love using Charlotte or russet potatoes, but you can swap for Yukon gold.

Potato Tacos With Spicy Sauce

Ingredients

  • 650g potatoes
  • 2 cloves garlic, chopped
  • 1 jalapeño, chopped
  • 3 tbsp coriander, chopped
  • 2 tbsp sunflower oil
  • 2 tbsp avocado oil
  • 1 tsp dried oregano
  • 1 tsp tex-mex mix
  • ½  tsp salt
  • ½ tsp paprika
  • ½ tsp cumin
  • ¼ tsp garlic powder
  • ¼ tsp white pepper
  • 8 soft tacos 

For the Spicy Sauce

    • 1 cup sour cream
    • ¾ cup fresh coriander, finely chopped
    • 1 tsp Mexican hot sauce
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1 jalapeños , finely chopped or use 2 tbsp of pickles jalapeño, finely chopped
    • 1.5 tbsp lime juice
    • salt to taste

For toppings

  • ½ cup sliced lettuce
  • 4 red radish, sliced
  • 1 jalapeño sliced
  • 2 spring onions, chopped
  • Salsa
  • Guacamole 

method

  1. Wash and cut the potatoes into 1-inch cubes. Bring a pot of salted water to a boil, then add the potatoes and cook for 3-4 minutes. Drain them in a colander, pat them dry, and transfer them to a bowl.

  2. Combine the two oils, along with ½ teaspoon of salt and ground pepper. Drizzle this mixture over the potatoes and gently stir to coat them. Line a rimmed baking sheet with tin foil and spread the potatoes in a single layer. Roast them in the oven for 10 minutes.

  3. In a small bowl, mix together the jalapeños, coriander, dried oregano, Tex-Mex mix, paprika, cumin, garlic powder, and white pepper. Stir in the partially roasted potatoes from step 2, then return the mixture to the oven for another 20 minutes, or until the potatoes are tender and nicely browned. Stir once halfway through the cooking time. Once done, transfer the potatoes to a large bowl.

  4. Meanwhile, make the spicy sauce. Combine all ingredients in a glass jar and shake or stir until creamy. 

  5. For assembling the tacos, start by spreading the spicy sauce on the base of the soft taco shells. Then, add a generous spoonful of the prepared potatoes on top. Finally, top with spring onions, radish, jalapeño, and lettuce, and more sauce. Serve. Enjoy your delicious potato tacos!
