Quinoa Salad with Green Dressing

Ingredients

For the Salad:

  • 2 carrots, julienned
  • 2 beetroots, spiralised or grated
  • 2 spring onions, chopped
  • 2 oranges, peeled and segmented
  • 1 cup quinoa
  • 1 cup sprouts
  • 1/2 cup parsley, roughly chopped
  • 1/2 cup toasted flaked almonds
  • Salt and pepper to taste
  • 1/2 cup dried currants (optional) 

For the Green Dressing:

  • 1/2 cup olive oil
  • 1/2 cup basil
  • 1/2 cup parsley
  • 2 cloves garlic
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp agave syrup

method

  1. Rinse the quinoa for 1-2 minutes and drain. Then proceed to cook the quinoa as per the packet instructions, and spread it out on a tray to cool.
  2. As the quinoa is cooling, prepare the dressing by combining all the ingredients in a blender and blitzing until smooth. Season with salt and pepper to taste.
  3. Assemble the salad by mixing the quinoa and dressing and all of the other ingredients apart from the beetroot. Once well mixed, garnish on top with the beetroot and serve.
