Ingredients

For Pumpkin Latte

  • 3 tbsp pumpkin puree, fresh or canned
  • ¼ tsp pumpkin pie spice, recipe below 
  • freshly ground black pepper 
  • 80ml espresso shots, or ½ cup strong coffee
  • 250ml milk of your choice
  • ½ tsp grated ginger
  • ½ tsp vanilla extract
  • pinch of salt

For Pumpkin Spice Mix (Makes ¼ cup)

  • 2 tbsp ground cinnamon
  • 1 tbsp ground ginger
  • 1 tsp nutmeg powder
  • ½ tsp cloves powder
  • ½ tsp all spice

method

  1. In a small saucepan over medium-high heat, combine the pumpkin puree, pumpkin pie spice, and a pinch of black pepper. Stir the mixture continuously with a spatula until it becomes very fragrant and slightly bubbly. This should take around 30 seconds to 1 minute.
  2. Once the pumpkin mixture is aromatic, whisk in the milk. Add the vanilla extract, maple syrup (adjust based on preferred sweetness), grated ginger and a pinch of salt. Stir the mixture continuously until the drink becomes hot, which should take around 2-3 minutes. Ensure it doesn't boil but heats thoroughly.
  3. If you're making a coffee version, brew the espresso or coffee into a mug. If you prefer a non-coffee version or want it to be kid-friendly, this step can be omitted.
