Using a food processor, I united all the cream cheese ingredients, spread it over toasted sourdough bread, and crowned it with the egg mix, resulting in a delightful, fulfilling meal.

If your mornings are made brighter with an everything bagel smeared with cream cheese, then this spread will surely win your heart. Taking inspiration from the iconic New York sandwich scene, this blend starts with a creamy base of cream cheese mixed with yogurt for that extra tang. It’s creamy, zingy, and absolutely delicious. How to Make Simple Cream Cheese Spread with Eggs

  1. Boil the Eggs : Start by boiling a small pot of water. Carefully place the eggs into the pot. Let them boil gently for about 10 minutes. After that, transfer the eggs to a bowl of ice water and let them cool down completely. Once cooled, crack and peel the eggs, and then cut them into rings or cubes.
  2. Make the Vinaigrette: Take a mixing bowl and whisk together the grainy mustard and white wine vinegar. Slowly pour in the olive oil while whisking continuously. Add the chopped capers and everything bagel seasoning. Taste and season the mixture with a pinch of salt and freshly cracked black pepper according to your liking.
  3. Mix: Add the eggs, finely sliced shallots, chopped tarragon leaves, and chives to the bowl with the dressing. Carefully mix everything together until it’s well combined. Keep aside.

Ingredients

For the Cream cheese Spread

  • 150g , cream cheese, softened 
  • 3 tbsp yoghurt
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • ½ tbsp fresh chives
  • 2 tsp caper, drained
  • 1 clove garlic, minced
  • 1 tsp everything bagel seasoning 
  • 1.5 tbsp olive oil 

For the Eggs

  • 4 medium eggs
  • 2 tsp grainy mustard
  • 1 tsp white wine vinegar
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp capers, chopped 
  • salt and black pepper 
  • 1 shallot or red onion, very thinly sliced
  • 2 sprigs tarragon, leaves picked, chopped 
  • 2 tsp chopped chives
  • 2 tsp everything bagel seasoning 
  • 3-4 large slices sourdough bread, grilled or toasted

method

For the Cream Cheese Spread

  • Using a food processor blend the softened cream cheese, yoghurt lemon zest, lemon juice, capers, chives, garlic, and everything bagel seasoning until well combined.  
  • Then gradually drizzle in olive oil while continuing to mix until smooth and emulsified.
  • Check the dressing's consistency and adjust by adding more yoghurt for a thinner texture if desired.
  • Transfer the dressing to a container with a tight-fitting lid and refrigerate until serving.
  • For enhanced flavour, chill the dressing for at least 1 hour or ideally overnight.

For the Egg Topping 

  • Boil eggs in a pot of water for 10 minutes, then transfer them to ice water to cool. Peel and with a sharp knife cut the eggs in rings.
  • Whisk together mustard and white wine vinegar in a mixing bowl. Slowly add olive oil while whisking. Mix in chopped capers, season with salt and pepper.
  • Combine sliced eggs, finely sliced shallots, chopped tarragon leaves, and chives with the dressing. Gently toss until well coated. Keep aside. 

Assembling 

  • Spread the cream cheese spread  on grilled or toasted bread slices.
  • Top with the prepared egg mix. 
  • Garnish with chopped chive, a dash of the everything bagel seasoning and cracked black pepper.
  • Serve and relish the delightful Cream Cheese and Egg Toast.
