SALAD

  • 1 head or lettuce of your choice
  • 10-12 strawberries, sliced (2 cups)
  • 1 cup sliced cucumber
  • ¼ cup candies walnuts
  • 2-3 tbsp mint leaves, finely chopped
  • 1 ripe avocado, sliced
  • black pepper

FOR THE CITRUS VINAIGRETTE

  • 2 tbsp organic apple cider vinegar
  • 3 tbsp orange juice, freshly squeezed
  • 1 tbsp lemon juice, fresh
  • 1.5 tsp zest of orange and lemon each
  • 2.5 tsp dijon mustard
  • 2 tbsp maple syrup
  • 1.5 tbsp mint leaves , minced or finely chopped
  • ¼ tsp black pepper
  • ¼ tsp salt
  • 150ml of light olive oil

FOR CANDIED WALNUTS

  • 1 cup walnut halves or pieces
  • 2 tbsp light brown sugar, packed
  • 2 tbsp honey or agave
  •  ⅛ tsp salt
  • 1 tbsp unsalted butter, melted or vegan butter

  2. Prepare the Walnuts: In a large bowl, combine the walnuts, brown sugar, honey, salt, and melted butter. Mix until the walnuts are thoroughly coated.
  3. Spread and Bake: Spread the coated walnuts in a single layer on the lined baking sheet. Bake for 10 minutes, stirring them halfway through. The walnuts are ready when they turn a deep brown.
  4. Cool the Walnuts: Remove the walnuts from the oven and stir them, spreading them out on the baking sheet. Let them cool for 5 minutes, then stir again. Allow the walnuts to cool completely before serving. If they are not as crunchy as desired after cooling, return them to the oven for an additional 5-7 minutes.
