Turmeric Tomato and Coconut Soup

Ingredients

  • 2 medium red onions, sliced
  • 6-7 cloves garlic, roughly chopped
  • 2 tbsp grated ginger
  • 2 tbsp fresh turmeric, grated
  • 3 tbsp coconut, grated
  • 4-5 pepper corns
  • ½ tsp paprika
  • 600 grams tomatoes, roughly chopped
  • 120 grams tomato puree
  • 1.5 cups water
  • 200 grams coconut milk
  • 2 tbsp oil
  • Salt to taste

For Garnish:

  • Sliced green onions
  • Crispy onions
  • Coconut cream

method

  1. Heat oil in a pan over medium heat. Add the onions, garlic, ginger, turmeric and fresh coconut. Sauté until the onions are lightly browned.
  2. Add the tomatoes and tomato puree along with paprika, peppercorns and salt. Sauté for 4-5 minutes. Add the water and bring to a boil.  Simmer and cook until the tomatoes are mushy and can be squashed with a wooden spoon. Alternatively you can put the mixture in a pressure cooker and give it 2 whistles.
  3. Put the mixture in a high speed food processor and blend until smooth. Strain the soup if required. 
  4. Place it back in the same pot and add coconut milk, make sure to stir continuously. Taste and adjust the seasoning as required
  5. Serve with crisp onions, spring onions and peanuts.
