There’s something wonderfully simple yet indulgent about toast, isn’t there? It’s often the foundation of comfort food, a blank canvas waiting to be dressed up or down. But if you’re like me, you sometimes crave a bit of excitement beyond the usual butter or avocado. Enter whipped feta and roasted za’atar chickpeas on toast—a combination that’s hearty, vibrant, and packed with flavour, elevated even further by a drizzle of luscious sesame butter.

I first experimented with this dish thanks to a challenge set by my boys. They’d been watching cooking shows where chefs turn random ingredients into something special and wanted me to do the same. All I had to work with were a tin of chickpeas, some za’atar, a few herbs, and a bit of feta. Before long, the kitchen was filled with the mouth-watering aroma of za’atar-spiced chickpeas roasting in the oven. The whipped feta added a creamy, tangy layer, while the roasted chickpeas brought a satisfying crunch and a burst of Middle Eastern flavour, all complemented by the nutty richness of sesame butter.

Now, this has become my go-to whenever I want something that feels indulgent but is surprisingly simple to make. Whether it’s for a lazy breakfast, a light lunch, or even a quick dinner, this dish always hits the spot. The contrast between the creamy feta and crispy, spiced chickpeas turns humble toast into something that feels a bit gourmet, yet still comforting and down-to-earth—perfect for any time of day.

  • Paprika: Adds a sweet and smoky depth, enhancing the flavour profile.

For Whipped Feta :

  • Feta: Forms the base of the whipped feta, adding creaminess and a tangy richness to the toast.
  • Labneh or Greek-style Yoghurt: Contributes to a smooth and creamy texture, with a slight tartness that brightens the dish.

How to Make the Toast (STEP-BY-STEP)

Step 1 : Roast the Chickpeas

  • Drain the chickpeas from the can and remove any skins. Pat them dry with a kitchen towel and transfer them to a mixing bowl.
  • Add extra virgin olive oil, za’atar, Aleppo chilli, cumin powder, paprika, salt, and pepper to the bowl. Mix well to ensure the chickpeas are evenly coated.
  • Preheat the oven to 200°C (about 400°F).
  • Line a baking sheet with baking paper and spread the chickpeas in a single layer on the sheet.
  • Roast in the oven for 25-30 minutes, or until they are crisp and golden.

Step 2: Make The Whipped Feta

Add crumbled feta, labneh, lemon zest, lemon juice, honey and extra virgin olive oil to a blender. Blend until smooth and creamy. Taste and adjust the seasonings as needed. Refrigerate until ready to use.

Step 3 : Make the Brown Sesame Butter

Heat a small skillet over medium heat. Add the butter and let it melt. Continue cooking until the butter is browned and fragrant. Turn off the heat and stir in the sesame seeds, crushed red pepper, minced chive and chopped dill leaves. Keep aside.

Step 4: Toast the Bread

  • Brush the sliced bread with extra virgin olive oil on both sides.
  • Heat a skillet, grill pan, or cast iron pan over medium-high heat.
  • Grill the bread slices for a couple of minutes on each side until they are lightly browned and toasted.

Step 5: Assemble the Toast

Spread the whipped feta over the toasted bread. Layer on the warm chickpeas, followed by cucumber slices, pomegranate arils, and crumbled feta. Finish with a generous drizzle of sesame butter and a drizzle of honey (optional) for added sweetness. For an extra touch, you can optionally add finely minced fresh parsley or dill leaves and some edible flowers.

Helpful Tips and Tricks to Make Whipped Feta and Roasted Chickpeas on Toast:

  1. Use Stale Bread: If you have stale bread, it works wonderfully for this dish. The toasting process will revive it, making it crispy and perfect for holding the toppings.
  2. Experiment with Flavours: Feel free to add other spices to the chickpeas, such as smoked paprika or garlic powder, to customise the flavour profile to your liking.
  3. Vary the Toppings: Mix it up! Try adding roasted red peppers, cherry tomatoes, or even pickled vegetables for a tangy crunch.

Ingredients

  • 4 thick slices of  bread about  ¾ inch thickness (multigrain, sourdough, or olive bread )
  • parsley and dill leaves
  • 1 tbsp feta cheese 
  • 2-3 tbsp pomegranate arils
  • cucumber slices

For the Roasted Chickpeas

  • 1 can chickpeas (400grams/14oz), drained and skin removed
  • 1.5 tbsp zaatar powder
  • 1tsp Aleppo chilli flakes
  • 1 tsp cumin powder
  • ½ tsp paprika
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp extra virgin olive oil

Whipped Feta Ingredients

  • 120 grams feta cheese
  • 2-3 tbsp labneh or greek style yoghurt
  • 1 tbsp extra virgin olive oil
  • zest of 1 lemon
  • 2 tsp lemon juive
  • 1 tsp honey (optional)

For Sesame Butter

  • 3 tbsp salted butter
  • 2 tbsp toasted sesame seeds
  • ¼ tsp aleppo chilli flakes
  • 1 tbsp minced chives
  • ½ tbsp chopped dill leaves
