Ingredients: For the Wontons:; 120g asparagus, finely chopped; 200g pressed firm tofu; 1 tbsp grated ginger; 2 cloves garlic, minced; 2 spring onions, finely chopped; 1 tbsp coriander stalks, chopped; 1 green chilli, finely chopped; 1 tsp rice vinegar; 2 tsp soy sauce; 1 tsp sambal oelek; 1 tbsp cornflour; salt and white pepper; pinch of sugar (optional); 1.5 tsp sesame oil; For the Broth :; 1 tbsp sesame oil; 3 shallots, roughly chopped; 2 spring onions, roughly chopped; 4 cloves garlic, roughly chopped; 2 tbsp chopped ginger; 2 carrots, diced; 1 celery stick, diced; 2 cups cabbage; 1 lemon grass; 3 tbsp gochujang; 1 tbsp Thai red curry paste; 3 tbsp light soy sauce; 1 vegetable broth cube; 1.5 litre of water
