Ingredients

For the Filling

  • 2 cups broccoli, finely chopped
  • 1 cup edamame, coarsely ground
  • 150 grams firm tofu, crumbled
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 spring onions, finely chopped
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 tbsp Shaxoing wine
  • 1/4 tsp sugar (optional)
  • 1/2 tbsp cornflour
  • 2 tsp sesame oil
  • Salt and white pepper to taste

For the Broth

  • 6-7 cups vegetable broth
  • 3 tbsp soy sauce
  • 2 cloves garlic, sliced
  • 2 tbsp ginger, sliced
  • 1 tbsp ginger juice
  • 2 stalk celery, roughly chopped
  • 2 tsp roasted sesame oil

For Garnishing

  • 1/2 cup green onions, finely chopped
  • 2 baby bok choy, blanched
  • 1 tbsp chilli oil
  • 1/2 tbsp black vinegar
  • Handful of sprouts

method

For the Filling

  1. Heat a large non-stick pan and add 2 teaspoons of oil. Sauté ginger and garlic until fragrant.
  2. Add broccoli and edamame, season with salt and pepper, and sauté for 1-2 minutes.
  3. Mix in soy sauce, rice vinegar, and sugar. Stir well and continue sautéing for an additional 2 minutes.
  4. Transfer the mixture to a large bowl. Add crumbled tofu, additional salt, pepper if needed, and 1/2 tablespoon of cornstarch if the mixture isn't binding. Combine thoroughly, ensuring no large tofu lumps remain. Set aside to cool completely.

Setting the Wrapping Station

  1. Arrange the filling, wonton wrappers (covered with a damp muslin cloth), a small bowl of water, and a tray for wrapping the wontons.
  2. Wrap the wontons one by one, keeping the wrappers covered to prevent drying out. Follow the instructions provided earlier for wrapping.

For the Broth:

  1. In a stockpot over medium heat, combine vegetable stock, ginger, garlic, and celery. Bring to a boil.
  2. Reduce heat to low and strain the broth, discarding the vegetables.
