These delightful treats are described perfectly by their name – they are soft, super chewy and all around perfect. Made with rolled oats, roasted desiccated coconut and golden syrup these cookies have a caramel toffee flavour along with a unique texture different to a typical cookie. They are incredibly healthy and filled with fibre and oats, while still being sweet and absolutely delicious.

Helpful Tips and Tricks for making Chewy Coconut and Oatmeal Cookies:
- Best substitute for golden syrup is a combination of 1 part light molasses or treacle plus 3 parts honey.
- This cookie dough is very forgiving, just make sure your dough is firm enough so that you can roll it into balls without it sticking to your hands or being crumbly If your dough is too sticky, add more flour, if it is too dry, add more melted butter.
- If you like crispier cookies then bake them for extra 2 minutes. Remove and cool on a cooling rack. They will harden when they cool. These cookies keep well in an air tight container for up to a week.
