Falahari chutney or Vrat chutney is made from coriander leaves, green chilies, and peanuts and is often eaten during vrats (Hindu fasting days) and festivals. The word falahari is derived from ‘fal’ which means fruits and ‘Ahaar’ which means food or diet. So falahari means a diet that consists of fresh fruits, vegetables, and their derivatives. Along with fruits and vegetables, certain herbs, dry fruits, and some dairy products are a part of the falahari diet. No onion or garlic is consumed during the fasting days and vrat recipes are prepared with mainly sattvic ingredients.
This chutney uses very few ingredients and is very easy to make, just put all the ingredients in a blender, blend until smooth, and its ready, it’s a perfect accompaniment with fasting food or even as a standard chutney with any snack like roasted potatoes, sweet potato chaat, etc.

HELPFUL TIPS AND TRICKS OF MAKING CORIANDER CHUTNEY:
- If you don’t have peanut you can substitute it with coconut, though the flavour will be a bit different
- Adjust the green chillies to your spice level. I like my food spicy.
- If you are planning on storing the chutney for later, I would recommend adding the lemon juice just before serving to give it a fresh and vibrant colour.
