Who doesn’t love a good hummus? It’s a creamy blend of ingredients that tastes absolutely heavenly on pita chips, bagels, sandwiches and much more. And it’s really healthy with a good amount of protein, fibre, iron and other nutrients you need for good health. Classic Hummus is absolutely divine, but I like taking different flavours and making new hummus recipes like my Rose Harissa Hummus with Sourdough Bread and this Layered Hummus Dip and if you’re looking for something new and exciting, try this roasted purple sweet potato hummus.. You are going to love it so much, you’ll have a hard time deciding which one you want today.

I am a big fan of bold and flavourful dishes. There’s just something about diving into a dish of goodness when it looks bright and savoury – and is brimming with colour, and purple sweet potato has all that. There’s something so warming and comforting about recipes with roasted sweet potato in them, which is why I thought of making an amazing hummus recipe with sweet & savoury flavours of sweet potato blended right in. Purple Sweet potatoes are bursting with colour and has a delicious flavour which is just out-of-this-world. Not to mention that its packed with fibre, vitamins, and minerals and to top it all it’s vegan and gluten-free.

I love a good staple food that I can enjoy year-round and sweet potatoes are available all year round. Add this hummus to your next garden party in summer or to your fall-inspired charcuterie board! It will for sure take your hummus up a notch!

How to perfectly Roast Sweet Potato:

That’s right, we’re jazzing up classic hummus by adding spices and a roasted sweet potato! Here’s the best, easiest way to roast one:

  1. Prep your potato. Start by preheating your oven to 200º C and wash your sweet potato removing all the dirt. Wipe it with a kitchen towel.
  2. Roast it up. Lay on a lined baking sheet and drizzle olive oil on it. Add 3-4 cloves garlic on the baking sheet as well peel on. Roast for about 35-40 minutes or until fully cooked and skin is crinkled.
  3. Cool it & use it. In this sweet potato hummus recipe, you’ll want to let the sweet potato cool completely, then remove the skin with your fingers and cut it into large chunks.

Delicious ways to enjoy sweet potato hummus

  • Use it as a dip for veggies, baked pita bread or crackers.
  • Add a touch of sweetness to savoury sandwiches, wraps or spread it on a slice of toast.
  • Make a party crostini with toasted sesame seeds and a sprinkle of feta.
  • Spread it on Bagels and top with chopped cucumbers, pickled onions and some lettuce.

Helpful Tips and Tricks to Make Hummus:

  • Roasting sweet potatoes helps the potato develop a sweet and caramel-like flavour which will add great flavour to the hummus.
  • Make sure to remove the skins of the chickpeas. It’s an extra step but makes ALL the difference with homemade hummus. Removing the skins is what will make your hummus smooth.
  • Make sure to use COLD water as stated in the recipe. It’s important it’s cold because this helps the hummus to whip up smooth and creamy. 
  • If you find your hummus is too thick, simply blend in an extra couple tbsp of cold water until it is the consistency you like.

Roasted Purple Sweet Potato Hummus

Ingredients

  • 1 large purple sweet potato, (350 g), roasted
  • 1/2 cup tinned or boiled chickpeas
  • 1/4 cup tahini
  • 4 cloves garlic, roasted
  • 1 tbsp pomegranate molasses
  • 1/2 tsp cumin powder
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • Salt to taste
  • 1 tbsp lemon juice
  • 1.5 tbsp olive oil

For Garnishing :

  • Dukkah
  • Micro herbs
  • Olive oil
  • Capers

method

  1. Preheat oven to 200º C.  Lay the sweet potatoes on a lined baking sheet and drizzle olive oil on it. Add 3-4 cloves garlic on the baking sheet as well with the peel. Roast for about 35-40 minutes or until fully cooked and skin is crinkled.
  2. Remove from the oven and let cool.
  3. While the sweet potatoes are cooling, toss all of the other ingredients into a food processor (if you’re sensitive to spice, you may want to save the spices for last and add them to taste). Once the sweet potatoes have cooled enough to handle, use a knife or your fingers to peel the skin off of them. Cut into big chunks and add the sweet potatoes to the food processor
  4. Cut the ends of the garlic cloves and remove the garlic from the peel. Add garlic to the blender
  5. Blend until smooth. May need to add ice cold water to get a slightly thinner consistency based on your preference. Taste and adjust seasonings to your preference as well, especially salt and spices.
  6. Garnish with micro herbs & dukkah, a drizzle of olive oil, and/or a light dusting of paprika if you wish.
  7. Enjoy with fresh slices or veggies or gluten-free crackers.
