Roasted fig salad with blue cheese dressing, a stunning way to start any meal, and wow your guests.
Gently roasted fresh figs, rocket leaves, red onions, combine the salty, creamy blue cheese dressing and topped with pistachios, you have yourself a salad you can’t stop eating! While I love fresh figs and they taste great, but there’s something about warm roasted figs heat softens the fruit and brings out its inherent flavours that is just amazing.
Figs’ compliment stronger cheeses like goat or blue. So today, I’m using the strong and robust Roquefort cheese for making the dressing. The perfectly balanced flavours all combine together to create a masterpiece on a plate. It is best to make this salad when figs are fresh and in season – June through October. This delicious salad can be made in less than 30 minutes so is great for a weekday lunch as well as being perfectly in place at a dinner party.
About Figs
Figs are stunning and have a rustic look but behind those deep hues, they have an earthy, sweet flavour that pairs really well with salads.
Figs come is many different varieties like Adriatic, Kadota, Brown Turkey and Black Mission. Black mission is the most common of all figs with the deep purple to almost black skin with bright pink flesh. The bright coloured flesh against the dark skin makes for an impressive looking fruit when it’s cut in half or wedges. They have a unique texture and sweet flavour.
Figs are fragile things, so plan to use them within a day or two of purchase. Nutritionally, figs are packed with fibre, minerals and vitamins A, E and K. Figs also contain probiotics which help support pre-existing good gut bacteria, therefore improving the health of your digestive system.
Ingredients for Fig Salad with Blue Cheese Dressing
Ingredients you will need to make grilled fig and whipped goat cheese salad:
Figs: Ensure when you buy figs they are just barely squeezable to the touch, not too soft, with smooth skin and no bruises, then refrigerate until you plan to use them.
Olive oil: Use good olive oil for the cooking process and you can use Organic extra virgin olive oil which is available on our website.
Pomegranate molasses: Grilled figs with pomegranate molasses will give you sweet, tart and sticky as the heat will help the caramelisation process in the oven.
Rocket leaves: Love its peppery bite, which goes well with caramelised figs. But feel free sub spinach or half spinach and half rocket leaves if you want.
Red Onions: They add a nice bite to the salad. Red onions vary greatly in their pungency. You can soak them in cold water for a bit before rinsing them to pull out more of their pungency and further soften their flavour.
Unsalted Pistachios: Adds the right amount of crunch to the salad.
How to Make Blue Cheese Dressing:
This creamy, salty roquefort cheese dressing tastes incredible on any salad! With just a handful of simple ingredients, you’ll have a delicious dressing that tastes better than anything you’d buy at the store.
Simply warm the créme fraîche and milk in a saucepan over low heat. Add the crumbled cheese and stir until smooth and melted. Remove from the heat and let it cool. Add the lemon juice, garlic powder, black pepper and snipped chives. Mix well and serve hot or cold.
Helpful Tips and Tricks to Make Roasted Fig Salad
- Purchase figs as individual fruit rather than in a pack so that you can inspect the fruit thoroughly. Also, make sure you’re buying them no more than 2 days before you’re making this salad. They are too perishable to be left lying around for days.
