With summer in full swing, beat the heat with these simple cold brew iced coffee popsicles containing only 3 ingredients. A flavourful treat to cool you down in the summer, they can also be an adult frozen treat when spiked with baileys. They are a great pick-me-up during the hot summer days. 

This recipe is guaranteed to cool you down and make your summer days memorable! 

It’s that time of the year, time to cool down and swap your hot coffees for iced coffees in the mornings, but lately, because of the heat wave I’ve been wanting to switch things up even more. Enter these popsicles – they’re icier than iced coffee, super refreshing on a hot day and certainly full of coffee flavour. 

Besides the deliciously strong coffee flavour, one of the best parts that I love about this recipe that you can tweak it to suit your own taste buds. You can’t ruin the outcome. Add a boozy hit from the Baileys which will give the popsicles a boozy sweetness to the popsicle. You can also adjust the amount of instant coffee or espresso powder to make the coffee flavour less or more intense. Or you could use decaf coffee if you want to make them kid friendly as well!!

These coffee popsicles are absolutely delicious and the perfect summer dessert. They would be a great dessert to bring to a family backyard party.!

What is cold brew? Why use a French press? 

What is cold brew? Cold brew coffee is a trendy coffee type made by soaking coffee grounds in cold, filtered water overnight. Unlike drip or brewed coffee. Which involves hot water passing through a filter and grounds, cold brew has a smooth taste ideal for iced coffee. This process also reduces its acidity, making it gentler on the stomach. If you haven’t tried it yet, it’s worth giving it a go. While it only takes 5 minutes to prepare, it needs to sit for 16-24 hours. Patience is key to achieving the right flavour, so plan ahead!

Why use a French Press or cafeteria for making cold brew coffee? Using a French press or cafeteria has its advantages. It’s a cleaner and simpler method compared to the traditional way of making cold brew. The French press streamlines the process of straining the coffee; just press and enjoy your drink!

How To Make The Simplest Cold Brew Iced Coffee Popsicles:

  1. Mix your cold brew coffee and condensed milk in a large measuring cup. Add vanilla essence and baileys if you prefer, and give it a good stir. Taste the mixture and adjust the flavour to suit your preference.
  2. Gently pour the coffee blend into the popsicle moulds until it almost reaches the top.
  3. Cover the moulds using their lids or by using tin foil with holes cut into it. Insert the popsicle sticks, ensuring around 1 inch sticks out at the top.
  4. Place the filled moulds in the freezer and allow them to freeze for at least 4 hours. For optimal results, freeze them overnight.

Helpful Tips and Tricks to Make Simple Cold Brewed Iced Coffee Popsicles:

  • Make strong coffee to ensure its flavour stands out against condensed milk and optional Baileys.
  • If the coffee isn’t strong enough, add extra instant coffee powder to the mix.
  • Use regular condensed milk or opt for coconut condensed milk as a vegan alternative.
  • To release popsicles easily, run their bases (not tops) under warm water for about 30 seconds.
  • Insert popsicle sticks straight to ensure easy removal of the lid later on.
  • Use tin foil instead of mould covers to keep sticks in place and prevent slipping.
  • If lacking popsicle moulds, freeze in small paper cups with wooden sticks. Secured by wrapping the cups’ tops in tin foil and poking the sticks through the middle.
  • For a caffeine-free version, use decaffeinated coffee to make these treats.

Ingredients

FOR THE COLD BREW CONCENTRATE

  •  ½  cup coarsely ground coffee (grind it yourself! It tastes so much better)
  • 450 ml cold water

FOR THE POPSICLES:

  • 400 ml cold-brewed concentrate
  • 160 ml condensed milk / coconut condensed milk
  • 1 tsp vanilla essence
  • 2 tbsp Baileys

method

FOR THE COLD BREW CONCENTRATE:

  1. The day before you want to make popsicles, make the cold brew by placing the ground coffee in a large French press.
  2. Pour the water over the coffee and stir well to combine. Cover the pitcher with a lid or plastic wrap and place in the fridge for at least 12 hours. I usually let mine “brew” for closer to 16 hours.
  3. Place the lid of the French press and slowly press the plunger all the way down. Pour the cold brew into a large glass or pitcher.
  4. Keep the concentrate chilled in the fridge.

FOR THE POPSICLES:

  1. Mix together the concentrate and the water (if you want it diluted) in a large measuring cup (preferably one with a pouring spout).
  2. Mix in the condensed milk, vanilla essence and Baileys.  Once combined, taste this mixture to ensure it is sweet/creamy enough for your tastes. Adjust as necessary.

TO ASSEMBLE:

  1. Pour the coffee-milk mixture into popsicle molds, filling them about halfway up. Place in the freezer for about an hour.
  2. Insert the popsicle sticks and then top each mold off with the coffee-only mixture.
  3. Freeze for at least another 4 hours or overnight.
