Ingredients

For the Noodles

  • 400g udon noodles, (2 vacuums packed )
  • 2 tbsp vegetable oil
  • 4-5 clove garlic, finely chopped 
  • 1.5 tbsp ginger, finely chopped
  • 4 stalks of green onions, chopped 
  • 2 stalks lemongrass
  • 8 kaffir limę leaves
  • 1 serrano red chilli, sliced
  • 100g broccolini
  • ¼ cup fresh coriander leaves, chopped
  • 2 tsp toasted sesame seeds
  • coriander micro greens for garnish

For The Sauce

  • 2 tbsp light soy sauce
  • 2 tsp dark soy sauce
  • 1 tbsp lemon juice
  • 1 tbsp sesame paste
  • 1 tbsp crispy chilli oil
  • 1 tbsp palm sugar or maple syrup
  • 2 tsp toasted sesame oil

method

  1. Prepare the aromatics - Finely chop the garlic, ginger, and green onions. Remove the outer layers of the lemongrass, cut off the ends, then bash it with the butt of a knife. Finely chop about 4 tbsp of the lemongrass. Remove the hard midrib from the lime leaves and finely chop them.                                            (4-5 garlic cloves, 1.5 tbsp chopped ginger, 4 green onion stalks, 4 tbsp lemongrass, 8 lime leaves)
  2. Boil the noodles - Bring a pot of water to a boil for the noodles. Cook the udon noodles according to the package instructions for about 3 minutes, then drain and set aside.                                                                  (400g udon noodles)
  3. Make the sauce -  In a bowl, combine the soy sauce, dark soy sauce, lemon juice, sesame paste, chilli oil, sesame oil, and palm sugar. Stir until well mixed.                                                                                                   (2 tbsp light soy sauce, 2 tsp dark soy sauce,  1 tbsp lemon juice, 1 tbsp sesame paste, 1 tbsp chilli oil, 2 tsp sesame oil, 1 tbsp palm sugar)
  4. Sauté the aromatics - Heat the vegetable oil in a nonstick pan over medium heat. Add the chopped garlic, ginger, green onions, lemongrass, and lime leaves. Sauté for about 2 minutes until fragrant.            (2 tbsp vegetable oil)
  5. Add the vegetables - Add the chopped broccolini and sauté for 2-3 minutes until tender-crisp.                   (1 cup broccolini chopped into bite-sized pieces)
  6. Combine noodles and sauce - Add the cooked noodles to the pan with the vegetables, then pour in the sauce. Toss everything together and sauté for another 2-3 minutes to coat the noodles in the sauce.        (Prepared noodles and sauce from Steps 2 & 3)
  7. Garnish and serve - Plate the noodles and garnish with toasted sesame seeds, red chilli slices, and coriander micro leaves.
