Keep your cool this summer with these refreshingly fruity, sweet and creamy Lychee and Lemon Popsicles. This combo gives you one scrumptious treato keep stocked in the freezer for the hottest days of the year. 

There’s nothing that can cool you down on a hot summer’s day like an icy cold popsicle. They are a perfect treat after a day in the sun! I remember my younger years in India, in peak summer, there was always the orange and mango popsicle vendor just around the corner to save us from the scorching heat.  Adults and children both would sit in what shade they could find and cool their whole body down by eating the delicious icy treats. What a fun and natural way to cool down! 

A hot summer day needs nothing more than these creamy lychee & lemon popsicles!  It doesn’t get any simpler. They’re, sweet, and so fruity, but also have some creaminess from the vanilla ice cream. I love these lychees popsicles as they are so much healthier than the store-bought ones which typically contain high fructose corn syrup and artificial flavours.

Warm weather means beautiful ripe fruit starting to appear at the local market. You can make Popsicles from any fruit. With so many choices I decided to make my favourite creamy lychee and lemon popsicle. I used to devour fresh lychee which was available in abundance in India during summers, but I can’t often find fresh lychee in London. Thankfully, there’s canned lychee available year-round. Hope you have as much fun creating these frozen treats as I did. Almost anything can be frozen, so grab your favourite ingredients and let’s play around!

The sweetness of the lychee pairs perfectly with luscious vanilla ice cream. These popsicles are sweet, and full of tropical fruit flavours of lychees mingled with the distinct citrusy flavours of fresh lemon juice and rose water and then mixed with vanilla ice cream to give it the added creaminess. One is not enough.

What are Lychee?? 

Lychees are native fruit to China and India. Lychees have an outer pink shell that can be easily peeled off to reveal a translucent white jelly like fruit. Inside the fruit is a large brown seed that is discarded. This small fruit is the perfect balance of sweet and tart which pairs splendidly with vanilla ice cream. 

What You Will Need:

This easy homemade popsicle recipe requires only 5 ingredients

  1. Canned Lychee  The main ingredient in these creamy lychee & lemon Popsicles. Using canned lychees is the way to go for this recipe. As you need both the lychees and the delicious lychee syrup it sits in for the flavours to come through in this recipe. And, by using the lychee syrup it also acts as the sweetener for you popsicles. You can find canned lychees at any Asian Grocery market in the canned fruit aisle.
  2. Vanilla Ice cream – Here is where you get the creaminess in your popsicle. Use homemade or good quality store bought vanilla ice cream, you can use reduced fat for a healthier pop.
  3. Lemon Juice – The zestiness of the lemon gives it a refreshing aftertaste.
  4. Rose Water – With a delicate floral aroma and taste, it can bring out a recipe’s sweetness and balance out more tart ingredients. 
  5. Sugar – When food freezes the taste becomes less intense, so you will need to add little sugar or honey. 

Helpful Tips and Tricks to make Creamy Lychee and Lemon Popsicles:

  • Use a blender: Using a blender will pulverise the lychees and thoroughly mix all the ingredients together. 
  • To prevent frothy bubbles from forming, make sure to blend the fruits at medium speed. Don’t be tempted to blend them at high speed. Higher the speed, more chance there is to create excessive froth. So start low, and then gradually increase the speed to medium.
  • Keep in mind that when food freezes the taste becomes less intense, so taste your mixture and make it slightly sweeter than you would a smoothie, because the sweetness will be less intense when frozen.
  • Some rose water have a very strong flavour so always add less than the mentioned quantity. Taste and add more as needed. 
  • The best way to store popsicles is the remove them from their popsicle moulds, and then place in a freezer-safe container or freezer-safe ziplock bag.

Creamy Lychee and Lemon Popsicles

Ingredients

  • 1 (565 g ) can of lychee
  • 125 grams vanilla ice cream
  • 1 tbsp sugar
  • 2 tbsp lemon juice
  • 1 tbsp rose water
  • Rose petal (optional)

method

  1. Place all the ingredients in a blender. Lychees,  lychee syrup, 125 grams vanilla ice cream, 1 tbsp sugar, 2 tbsp lemon juice and 1 tbsp rose water.
  2. Blend on low speed, gradually increasing to medium speed, until the lychees are blending smoothly without forming a bubbly foam. Blend until smooth. Taste and adjust the sweetness and rose flavour.
  3. Pour the puree into popsicle molds. Make sure to stir the puree between pouring it into molds, so that the juice doesn't separate from the pulp too much as you're pouring.
  4. Insert the popsicle sticks and freeze for at least 7-8 hours (overnight is better) until the popsicles are completely frozen
