The Ultimate Grapefruit Paloma

The Ultimate Grapefruit Paloma is one of those drinks that feels like a little celebration — citrusy, sparkling, and perfectly bittersweet. It’s bold without being loud. Refreshing without being fussy. And ideal when you want something simple but special.

I’ve always found Palomas more interesting than a Margarita. Maybe it’s the soft bitterness of grapefruit, or how it balances beautifully with the warmth of tequila. Add a splash of soda, a hint of lime, and a salted rim — and you’ve got a cocktail that’s relaxed, but effortlessly elegant.

What makes this version a little special? The rim. Not just salt, but Tajín — that bright, tangy chilli-lime seasoning that adds a spicy-sour kick with every sip. It sets the tone before the drink even hits your lips. It’s layered but not complicated — balanced and refreshing.

It’s the kind of cocktail you’ll want on a sunny afternoon, a casual evening, or when you’re simply in the mood to shake up something a little different.

What is a Paloma?

At its heart, the Paloma is Mexico’s most beloved cocktail — bright, citrusy, and endlessly drinkable. Made traditionally with tequila, grapefruit soda, and a pinch of salt, it’s served over ice in a tall glass, usually with a salted rim that enhances every sip.

But don’t let its simplicity fool you. The Paloma isn’t just tequila’s answer to a summer spritz — it’s a perfectly balanced drink that leans more tart than sweet, more crisp than bold. Where the Margarita shows up loud and limey, the Paloma whispers — quietly refreshing, gently bitter, softly sparkling. It’s the kind of cocktail that doesn’t need to be dressed up to feel elegant.

And like many classics, the Paloma has evolved. Some versions skip the soda in favour of fresh grapefruit juice, a splash of soda water, or a hint of agave. Others take a spicy turn with chilli salt rims or a twist of mezcal in place of tequila. Our take celebrates that versatility — vibrant and layered, with a touch of spice and a lot of soul.

What You’ll Need to Make the Ultimate Grapefruit Paloma

Blanco Tequila
Clean, crisp, and ideal for letting the citrus shine. Choose a good-quality 100% agave blanco tequila — it’s the backbone of this cocktail.

Fresh Grapefruit Juice
The heart of a Paloma. Freshly squeezed pink grapefruit juice brings a balance of tartness and subtle sweetness. It’s what makes this version so vibrant.

Lime Juice
Adds brightness and zing. Just a splash of freshly squeezed lime juice rounds out the flavours and lifts the citrus notes beautifully.

Simple Syrup
Balances the sharpness of the grapefruit and lime. Adjust depending on the natural sweetness of your fruit.

Grapefruit Bitters
Optional, but adds an extra layer of complexity. Just a few drops deepen the citrus profile and elevate the drink.

Grapefruit Soda or Sparkling Water
To top up and fizz it out. Choose a grapefruit soda for a classic twist, or go with soda water if you prefer a less sweet version.

Tajín or Salt (for rimming)
This is where the fun begins. Rimming your glass with Tajín adds a spicy-sour kick that complements the drink perfectly. Or stick with classic flaky salt for a more traditional touch.

Ice
Lots of it. Keep everything chilled and crisp.

Garnish: Grapefruit Wheel or Lime Wedge
A thin slice of grapefruit adds instant elegance and a hint at what’s inside.

How to Make the Ultimate Grapefruit Paloma

Start by preparing your glass. Rub a wedge of lime around the rim and dip it into Tajín or sea salt. This adds a pop of flavour from the very first sip — tangy, salty, and just a little spicy.

Next, it’s time to build the base. In a cocktail shaker, add your blanco tequila, fresh pink grapefruit juice, freshly squeezed lime juice, and simple syrup. Add a few drops of grapefruit bitters if you’d like to dial up the complexity — it’s optional, but a beautiful touch.

Fill the shaker with ice and shake until it feels cold to the touch — about 10 to 15 seconds should do.

Strain the cocktail into your prepared glass filled with fresh ice. Top with grapefruit soda or sparkling water to taste. This gives the drink that signature fizz and balances the sharpness of the citrus.

Finish with a slice of grapefruit, and serve immediately.

Whether you’re sipping in the sunshine or starting off a dinner with friends, this Grapefruit Paloma brings freshness, balance, and just the right amount of zing.

Helpful Tips and Tricks to make the Ultimate Grapefruit Paloma

  1. Fresh juice makes all the difference – Grapefruit and lime are the stars here. Use freshly squeezed juice whenever you can — the flavour is brighter, cleaner, and makes the cocktail feel instantly elevated.
  2. Taste before you sweeten – Not all grapefruits are the same. Some are naturally sweet, others more tart. Start with less simple syrup and add more only if needed. A quick stir and sip will guide you.
  3. A little bitters goes a long way – Grapefruit bitters are optional, but they add depth and balance. Just a few drops can enhance the drink without overpowering it.
  4. Choose good tequila – Look for a blanco tequila made from 100% agave. It’s smoother and more balanced, letting the citrus shine through. Avoid “mixto” tequilas which can be harsh or overly sweet.
  5. Rim it right – Instead of plain salt, try a Tajín rim — it’s tangy, slightly spicy, and adds a subtle kick to each sip. Simply run a lime wedge around the glass and dip in the seasoning.
  6. Shake, then top – Shake the cocktail base with ice to chill and blend. Add the sparkling grapefruit soda last, and stir gently to keep the fizz intact.
  7. Serving a crowd? Batch the cocktail base ahead of time and refrigerate. When ready to serve, shake over ice in portions, top with soda, and garnish. Effortless, but still impressive.

Commonly Asked Questions ?

What’s the best tequila for a Paloma?
A good-quality blanco (silver) tequila made from 100% agave is ideal. It’s smooth, clean, and lets the citrus shine. If you prefer something richer, a reposado adds a mellow, oak-aged note.

Is grapefruit soda necessary?
Traditionally, yes — it gives the Paloma its signature fizz. But if you’re using fresh grapefruit juice, just top up with sparkling water or soda for that bubbly lift.

Can I make this ahead of time?
You can mix the tequila, grapefruit juice, lime juice, and syrup in advance and chill it. When ready to serve, shake with ice, pour, and top with soda.

How do I make a non-alcoholic version?
Swap tequila for sparkling water or a grapefruit kombucha. It’s still zesty, bright, and totally refreshing.
