Ingredients

    • 1 tbsp olive oil
    • 1 fresh fennel, roughly sliced
    • 800g ripe tomatoes, roughly chopped
    • 3-4 thyme sprigs
    • ½ tsp chilli powder
    • 1 tsp sherry vinegar
    • 350ml fresh orange juice
    • 200ml water
    • ½ tsp honey
    • ½ tsp black pepper
    • salt to taste

method

  1. Heat olive oil in a large pot and sauté the fennel until soft. (1 tbsp olive oil, 1 fresh fennel)
  2. Add the chopped tomatoes, ¼ tsp of salt and cook for about 10 minutes until they break down. (800g ripe tomatoes, ¼ tsp salt )
  3. Stir in thyme sprigs, chilli powder, and sherry vinegar. Cook for a few more minutes. (3-4 thyme sprigs, ½ tsp chilli powder, 1 tsp sherry vinegar)
  4. Add orange juice, honey, and water. Simmer gently for 20 minutes. (350ml fresh orange juice, ½ tsp honey, 200ml water)
  5. Remove the thyme sprigs and blend the soup until smooth.
  6. Taste and adjust with salt and pepper. (½ tsp black pepper, salt to taste )
