Ingredients

For the Soup

  • 1 brown onion, chopped
  • 2 large leeks, cleaned and chopped
  • 2 whole small heads of garlic (approximately 60g each), peeled and roughly chopped
  • 2 medium-sized sweet potatoes, cut into pieces
  • 1 red chilli, sliced, (deseed for milder taste)
  • 1.25 litres of vegetable stock
  • ½ teaspoon dried thyme leaves
  • ½ cup cream or oat cream
  • 2 tbsp  olive oil
  • 3 tbsp chopped parsley

For the Croutons

  • 6 slices of rustic bread or sourdough bread for croutons
  • Salt and pepper
  • Olive Oil

method

  1.  Chop the onions into medium-sized pieces. Set them aside. Peel the garlic cloves,  roughly chop them and keep them aside. Wash the leek, chop it, and set it aside.
  2. Put olive oil into a heavy based pot or saucepan on medium heat. Add the chopped onion, leek, and dried thyme. Let them cook without browning. Reduce the heat and add the garlic. Cook gently for around 15 to 20 minutes.
  3. While that's cooking, peel and cut the sweet potatoes  and red chillies into small pieces. Add them to the pot along with all the vegetable stock. Season with salt and pepper. Simmer gently for 25 to 30 minutes.
  4. Pour in the cream, stir well, then blend the mixture using a blender or a stick blender directly in the pot. Taste to check the seasoning.
  5. For the croutons -  dice some bread and fry it in olive oil on low heat until it turns brown and crispy. The slower you cook them, the crispier they'll be in the soup.
  6. Serve the soup with the croutons and chopped parsley on top. Enjoy your delicious homemade garlic and leek soup with sweet potatoes!
