Mexican Cheese on Toast with Avocado

This isn’t your average cheese on toast, it's Mexican cheese on toast with Avocado Salsa! This.Is. Amazing. Packed with plenty of flavour and simple to make this cheese on toast is actually one of my favourite meals in general. It’s so delicious, I’d call it one of life’s simplest pleasures. Combining 2 different type of cheese with a red onion, sweetcorn, herbs and spice mixture and finishing with  irresistible avocado mix and a hot sauce you end. . .
