Ingredients

For the Spiced Pear and Ginger Syrup

  • 2 diced pears
  • 2 tbsp grated ginger
  • 100 grams granulated sugar
  • 120 ml water
  • ½ teaspoon vanilla extract
  • 2 inch cinnamon stick
  • 1 star anise
  • ⅛ tsp ground nutmeg

For the Cocktail

  • 100 ml gin
  • 60 ml pear juice
  • 40 ml pear and ginger syrup
  • 30 ml fresh lemon juice
  • Ice cubes
  • Soda water
  • Pear slice and thyme (for garnish)

 

method

For the Spiced Pear and Ginger Syrup

  1. In a saucepan, combine diced pears, grated ginger, sugar, water, cinnamon stick, star anise, and nutmeg.  (2 diced pears, 2 tbsp grated ginger, 100g sugar, 120ml water, 2" cinnamon stick, ½ tsp ground nutmeg)
  2. Bring to a simmer over medium heat, stirring occasionally, until the pears soften and the sugar dissolves, about 7-8 minutes.
  3. Use a fork or masher to lightly mash the pears, releasing their juices.
  4. Simmer for an additional 5 minutes on low heat to infuse the flavours.
  5. Remove from heat and stir in vanilla extract.                                                                                                             (½ tsp vanilla essence)
  6. Strain the syrup through a fine-mesh sieve into a jar, discarding the cinnamon stick and solids.
  7. Allow to cool before using. Store in the fridge for up to two weeks

For the Cocktail

  1. Add gin, pear juice, pear and ginger syrup, and lemon juice to a cocktail shaker.                                             (100ml gin, 60ml pear juice, 40ml pear and ginger syrup, 30ml lemon juice)
  2. Fill with ice and shake until well combined.
  3. Strain into a glass filled with fresh ice.
  4. Top with a splash of soda water.
  5. Garnish with a pear slice and a sprig of thyme.
