The Ultimate Strawberry Soju Cocktail

Some drinks are meant to impress. This one — The Ultimate Strawberry Soju Cocktail — is meant to be enjoyed.

It’s simple — fresh strawberries, a splash of citrus, a gentle pour of soju, and a little fizz to finish. But don’t let that simplicity fool you. There’s something about the way it all comes together — light, balanced, and quietly refreshing — that makes this one of those recipes you’ll reach for more than you expect.

There’s no syrup to make, no long list of ingredients — just clean flavours that work beautifully together. And whether you’re serving one or making a jug for a table of friends, it pours well into any kind of moment.

What is Soju?

Soju is a clear, neutral spirit that’s widely enjoyed in Korea. It’s usually made from rice, but some modern versions use sweet potato or tapioca instead. The alcohol content is lower than most spirits — often between 12% and 16% — which makes it easy to sip and mix.

One of the reasons soju has become so popular is the wide range of flavoured options available. You’ll find everything from peach and green grape to citrus, apple, and strawberry. These flavoured sojus are lightly sweet, fruity, and work especially well in cocktails.

For this recipe, I’ve used strawberry soju to highlight the fresh berries. But if you can’t find it, plain soju with muddled strawberries is a great swap — and just as refreshing.

Why You’ll Love This Recipe

  • Light and refreshing – It’s the kind of drink you can sip slowly. Not too strong, not too sweet — just well balanced.
  • Minimal ingredients, maximum flavour – A few good things come together beautifully: fresh strawberries, flavoured soju, and a squeeze of citrus.
  • No fancy equipment needed – No shaker, no syrup — just a glass, a spoon, and a bit of muddling.
  • Easily adaptable – Make it with plain soju and fresh fruit, or try other flavours like peach or green grape.
  • Perfect for any occasion – Whether you’re serving one or mixing a jug to share, it’s effortless to scale.

🍓 Ingredients You’ll Need to Make The Ultimate Strawberry Soju Cocktail:

This cocktail comes together with just a handful of ingredients — simple, but full of flavour.

  • Strawberries – Fresh, ripe strawberries give the drink its natural sweetness and colour. Chopped and muddled gently, they form the base of the cocktail.
  • Sugar – Just a touch to bring out the flavour of the berries. You can adjust depending on how sweet your strawberries are.
  • Lemon juice – Adds brightness and a little edge to balance the sweetness. It lifts the drink and keeps it feeling light.
  • Strawberry soju – Smooth, lightly sweet, and full of fruit flavour. It adds a gentle kick without being overpowering.
  • Strawberry soda or sparkling water – A fizzy top-up that makes the drink feel crisp and refreshing. Use soda for a fruitier finish, or sparkling water to keep it clean.
  • Yakult – This probiotic drink adds a soft creaminess and a slightly tangy note. Unexpected, but it works beautifully with the strawberries.
  • Ice – To chill everything down and keep it refreshing from first sip to last.

How to Make The Ultimate Strawberry Soju Cocktail

Start by chopping the strawberries. Place them in a small bowl with the sugar and lemon juice. Mix gently, then set aside for about 20 minutes. This lets the berries soften and release their juices, which become the base of the drink.

Once the strawberries are macerated, muddle them lightly to break them down further. You want a mix of texture and juice — not a purée.

Add the strawberry soju and Yakult. Stir well to combine.

Fill your serving glass with ice. Pour in the strawberry mixture, then top with strawberry soda or sparkling water.

Give it a gentle stir and garnish if you like — a strawberry slice, a mint sprig, or nothing at all.

Serve chilled, and enjoy straight away.

Helpful Tips and Tricks to make The Ultimate Strawberry Soju Cocktail :

  • Use fresh strawberries if you can – They have a cleaner flavour and hold their shape better when muddled. But frozen works too — just thaw them for 15–20 minutes before chopping.
  • Adjust the sweetness – The sugar balances the citrus, but how much you need will depend on the strawberries and the soju you’re using. Taste and tweak.
  • Yakult adds creaminess – It’s optional, but adds a subtle tang and texture that makes the drink feel more rounded.
  • Soju strength varies – Some flavoured sojus are softer than others. If you’re after something a little stronger, feel free to add an extra splash.
  • Make it a slushie – Blend everything together with frozen strawberries and ice for a summer-style frozen version.
  • Serve immediately – Once mixed, this cocktail is best enjoyed fresh while the fizz is still light and lifted.

Serving Suggestions

This cocktail looks beautiful in both coupe glasses and tall highball glasses — it just depends on the moment.

  • For something a little elegant, strain and serve in a chilled coupe glass. It’s perfect for a smaller, more refined sip.
  • For a longer, more casual pour, use a highball glass filled with ice and top generously with soda. It’s light, refreshing, and ideal for sharing — or savouring slowly.

Garnish with a fresh strawberry or a sprig of mint, if you like. Or keep it unfussy — the colour alone is enough.
