  3. Muddle the Mint: Add mint leaves and simple syrup in a cocktail shaker and muddle the mint until the leaves are well bruised. Add the watermelon cubes and muddle again until they turn into juice.
  4. Mix Everything Together: Add rum and lime juice and fill the cocktail shaker with ice. Shake with both hands until well mixed and cold.
  5. Pour in a Glass: Add ise to a glass, and strain the drink into the glass. Top with soda water.

1] Making a Large Batch

  • When making large batch or pitcher, place the watermelon cubes in a blender or food processor and pulse until well pureed. Pour through a fine mesh strainer and into a large pitcher. Set aside. 
  • In a medium bowl, combine the mint leaves and the simple syrup. Using the back of a spoon, muddle the mint leaves into the syrup until the leaves are well bruised. Pour this mixture into the pitcher.

Ingredients

  • ½ cup cubed watermelon, plus more for garnish
  • 6-7 mint leave, plus additional for for garnish
  • 40ml white rum
  • 15ml lime juice
  • 30ml simple syrup
  • 60ml soda water
  • ice cubes for serving

method

  1. Chop the watermelon into cubes. In a cocktail shaker, add the mint leaves and simple syrup and muddle till the leaves are bruised. Add the watermelon cubes and muddle again until they turn into a puree.
  2. Add the rum and lime juice and fill the shaker with ice. Shake until cold and well mixed.
  3. Add ice in a serving glass, and carefully strain the drink into the glass. Top the glass with soda water.
  4. Garnish with mint leaves and watermelon slice. Cheers!!
