Authentic Mexican Horchata Recipe

Ingredients

  • 3 cups water
  • 2 cups almond milk
  • 1 ¼ cup long grain rice
  • ¾ cup maple syrup
  • ⅔  cup sliced almonds, blanched
  • 2 cinnamon sticks (5g)
  • 1 tsp vanilla extract

method

  1. Put the rice, almonds and one cinnamon stick in water. Wash and let it soak for 7-8 hours.
  2. Drain the water out, and add the rice, almonds and cinnamon stick to a high speed blender. Blend for a minute on high speed until fully pulverised. Pour 2 cups of water, the vanilla extract and maple syrup into the mixture and blend again for another 2 minutes.
  3. Now add the remaining water, milk and blitz again. Taste and adjust the sweetness to your taste
  4. Pour the mixture into a large container, cover it, and let it chill in the fridge for 6-8 hours. It's best to let it soak overnight.
  5. Over a big jug, strain the mixture using a nut-milk bag.
  6. Taste the mixture and add more sweetener if needed.
  7. Serve - Add ice to the jug, give everything a good stir, and serve in glasses with a sprinkle of freshly ground cinnamon.
