As a popular snack among soldiers, an Egg Benjo consisted of two thick slices of bread, often buttered or margarine, enclosing a runny fried egg. This simple yet satisfying meal was often accompanied by a mug of “gunfire,” a hot and strong tea sweetened with milk.

The unique name “Banjo” stems from the actions soldiers took when biting into the sandwich. As the runny egg yolk would inevitably drip down onto their chests, soldiers would hold the sandwich out to the side with one hand while using the other hand to rub at the drips with their fingers. This motion created the impression of playing an invisible banjo, hence the playful and memorable name “Egg Banjo.”

Today, this humble delight has found a new home in the bustling streets of Indore, India. Renowned for its culinary diversity, Indore has embraced the Egg Banjo as a cherished street food favorite. Its popularity extends beyond the streets, as evidenced by its status as the most ordered dish on Uber Eats.

Ingredients Needed to Make The Best Desi Style Omelette Burger

  • Eggs: The star ingredient of this recipe, providing the base for the flavourful omelette patty.
  • Red Onions: Adding a sweet and tangy crunch, red onions lend their vibrant hue and distinct flavour to the dish.
  • Small Green Chilli: Also known as fresh bird’s eye chilies, these small green chilies pack a punch of heat, adding a spicy kick to the omelette mixture.
  • Coriander: Fresh coriander leaves, also known as cilantro, contribute a refreshing burst of citrusy and herbaceous flavour to the dish.

How to Make The Best Desi Style Omelette Burger

Prep the ingredients. Before heading to the stove, ensure all ingredients are prepped. Finely chop the onion, green chillies, coriander. Have the cheese ready, whether it’s unwrapping a processed slice or grating a fresh block.

Whisk the eggs. Crack the eggs into a small bowl. Add the chopped onions, coriander, chilies, and all the spices. Whisk the mixture and set it aside.

Prepare the burger buns. Ensure the burger buns are ready for the cooked eggs. Spread the green chutney on one side of the bun, place a slice of tomato, and set aside.

Make the omelette. Heat a non-stick pan on medium heat. Add some butter. Once melted, pour in the whisked eggs. Swirl the eggs around the pan to ensure they spread evenly. Cook for just a few minutes.

Finish & Enjoy. Quickly flip the omelette, add the cheese (if using), cover, and turn off the heat. Let the residual heat finish cooking the omelette and melt the cheese. After about a minute, halve and fold the omelette to fit your bread. Transfer the omelette to your prepared bread and add the lettuce and sliced onions. Enjoy while still hot!

Best Desi Style Omelette Burger

Ingredients

  • 2 large eggs 
  • ¼  cup finely chopped onions
  • 2 tbsp finely chopped coriander
  • ½ green chilli, finely chopped
  • 2 tablespoons water
  • dash of turmeric
  • ½ tsp chilli powder
  • ½ tsp garam masala
  • salt and pepper to taste
  • 2  hamburger buns or bread of your choice
  • 2 teaspoons butter
  • Sliced red onions
  • green chutney
  • tomato ketchup
  • Sliced tomatoes
  • cheese slice (optional)

method

  1. Begin by cracking the 2 large eggs into a mixing bowl. Add in the finely chopped onions, coriander, chillies, water,  red chilli pepper, dash of turmeric powder, garam  masala,  and season with salt and pepper to taste.

  2. Beat the mixture until smooth, ensuring it's well combined but not overly frothy.

  3. Heat a large pan or skillet over medium heat. Coat the surface well with butter, ensuring it's evenly distributed.

  4. Pour the egg mixture onto the heated pan or skillet, allowing it to spread out to your desired thickness. Cook until the omelette is set and firm on one side, usually about 2-3 minutes. Drizzle a bit of olive oil around the edges to prevent sticking.

  5. Carefully flip the omelette using a large flat spatula, taking care not to break it. Cook for an additional minute to ensure it's fully cooked through.

  6. Once cooked, half the omelette and fold the omelette over onto itself . 

  7. While the omelette is cooking, drizzle a bit of olive oil onto another skillet or pan. Place the buns or bread of your choice onto the skillet and toast them until they are lightly golden brown.

  8. To assemble the burgers, spread green chutney on one slice of the bun, place a slice of tomato, then place each portion of the omelette onto a toasted bun. Top with sliced red onions and lettuce leaf  and a generous drizzle of tomato ketchup if you like. 

  9. Enjoy biting into the juicy and flavourful egg benjo!
