Cherry tomatoes are a wonderfully versatile fruit. Sprinkle them on a salad, roast them for their intense flavour, or simply pop them into your mouth. They are available in a wide variety of colours, shapes and sizes, as used in this recipe – from grape size to golf ball size and from perfectly round to oblong or pear-shaped, and are available in red, yellow, green, orange and even black colour. Summer months are the best to enjoy this fruit and this salad really allows the raw, peak-season tomatoes, which are extra fragrant, plump, sweet, juicy and bursting with flavours, to shine.

This is a very simple salad, packed with the lots of fresh herbs which add a lot of intense flavour, with a Middle Eastern dressing which just brings it all together. The feta cheese really compliments the salad and brings in an added creaminess and saltiness to the salad.

Ingredients for Vibrant Cherry Tomato and Feta Salad:

With only 6 ingredients (and an easy to make salad dressing) you can whip up this cherry tomato salad in no time flat.

  1. Cherry Tomatoes. These are the star ingredient of this salad so they can make or break the salad. If it’s the peak of summer when tomatoes are juicy and sweet, go ahead and use full-sized tomatoes. If it’s spring, fall, or winter, I would recommend using cherry tomatoes.
  2. Red onion. Make sure it is thinly sliced and soaked in ice cold water so it’s not over-powering.
  3. Feta cheese. Adds creaminess and texture.
  4. Herbs. Dill and parsley add intense flavours to this salad
  5. Green Onions.

Ingredients For the Dressing :

  • Start with the very best olive oil you have in your pantry.
  • Mince the garlic
  • Use vinegar and pomegranate molasses, as the combination really takes the dressing to the next level.
  • Lemon juice brightens up the flavour.
  • Honey to cut the tartness of the lemon juice and the molasses
  • A little dried oregano, sumac and a little salt and pepper

Assembling the salad:

In a large mixing bowl or salad bowl add the chopped herbs, halved tomatoes, slices onions, chopped green onions and garlic. Combine and keep refrigerated. Before serving add the dressing and mix well.

Helpful Tips and Tricks to make Cherry Tomato Salad:

  • The tomatoes. Unless you’re lucky enough to score tomatoes from the farmers’ market or your garden, always use cherry tomatoes. These little guys are much sweeter and more reliable year-round.
  • Ripe tomatoes are the key to this salad as they are the star ingredient. Avoid packaged tomatoes as loose tomatoes are easier to evaluate and choose. Look for tomatoes that are plump and heavy for their size, fairly firm but with some give.
  • Do not buy bruised, cracked or sub-par tomatoes as they are not worth it for this salad.
  • The key to this fresh cherry tomato salad is to let it sit at room temperature for a few minutes and let the tomatoes marinate. Add the feta cheese just before serving.
  • Fresh herbs. The flavour of using fresh herbs in this tomato salad totally kicks it up a notch.
  • Onions. It is important to soak the onions in water, as raw onion can be intense and over powering. Soaking them in ice-cold water while we prepare the remaining ingredients will make the sliced onions crisp and will improve the overall flavour and texture of the salad.

Ingredients

  • 500 grams cherry tomatoes, halved
  • 1 red onion, sliced
  • 1 green onion, chopped
  • ⅓ cup dill, chopped
  • ⅓ cup parsley, chopped
  • 100 grams Feta cheese, cubed (optional)

For Dressing:

  • ¼ cup extra virgin olive oil
  • ½ tsp minced garlic
  • 2 tsp pomegranate molasses
  • 2 tsp white wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp honey or maple syrup
  • 1 tsp fried oregano
  • 2.5 tsp sumac
  • Salt and pepper to taste

method

  1. In a small bowl with ice water add the sliced red onion. Set aside and prep the remaining ingredients. 
  2. In a mason jar add all the ingredients of the dressing and shake until emulsified. Taste and adjust the seasoning.
  3. Drain the onions, then to assemble the salad get a large mixing bowl and add the tomatoes, onions, fresh herbs and garlic. Add  ¾ of the dressing, toss to combine. Taste and adjust the seasoning and add more dressing if needed.
  4. Transfer to a serving bowl and top with Feta cheese.
